How To Make Sheet Pan Shrimp Fajitas

Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons of olive oil
- 2 tablespoons of fajita seasoning
- Salt and pepper, to taste
- 8 tortillas, for serving
- Optional toppings: sour cream, guacamole, shredded cheese, salsa
Instructions

Preheat your oven to 425°F (220°C).

In a large bowl, combine the shrimp, bell peppers, red onion, olive oil, fajita seasoning, salt, and pepper. Toss until everything is well coated.

Transfer the shrimp and vegetables to a sheet pan lined with parchment paper or aluminum foil, spreading them out in an even layer.

Bake in the preheated oven for 15-20 minutes, or until the shrimp is cooked through and the vegetables are tender.

While the shrimp and vegetables are cooking, warm the tortillas in a dry skillet over medium heat or wrap them in foil and heat in the oven.

Serve the sheet pan shrimp fajitas with warm tortillas and your favorite toppings such as sour cream, guacamole, shredded cheese, and salsa.
