Ingredients
- 2 lbs oxtail
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 cloves of garlic, minced
- 1 bay leaf
- 1 sprig of fresh thyme
- 4 cups beef broth
- 2 cups water
- Salt and pepper to taste

In a large pot, heat some oil over medium-high heat. Add the oxtail and brown on all sides until golden brown. Remove from the pot and set aside.

In the same pot, add the chopped onion, carrots, celery, and minced garlic. Cook until the vegetables are soft and fragrant, about 5 minutes.

Return the oxtail to the pot and add the bay leaf, thyme sprig, beef broth, and water. Season with salt and pepper to taste.

Bring the soup to a boil, then reduce heat to low. Cover and let simmer for 2-3 hours, or until the oxtail is tender and the flavors have melded together.
