Ingredients

  • 2 cups cooked risotto rice, cooled
  • 1/2 cup grated Parmesan cheese
  • 4 oz mozzarella cheese, cut into small cubes
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the cooked risotto rice with grated Parmesan cheese, salt, and pepper.

  2. Take a small portion of the rice mixture and form it into a ball. Make a small hole in the center and place a mozzarella cube inside. Close the hole and roll the ball to seal it. Repeat with the remaining rice mixture and mozzarella.

  3. Dip each rice ball into beaten eggs, then roll it in breadcrumbs to coat evenly.

  4. Heat vegetable oil in a deep pan or fryer to about 350°F (175°C).

  5. Carefully add the rice balls to the hot oil and fry until golden brown and crispy, about 3-4 minutes. Remove from the oil and drain on a paper towel-lined plate.

  6. Serve hot and enjoy the crispy, cheesy arancini!
