Ingredients

  • 2 cups cooked Arborio rice
  • 4 tbsp spicy nduja sausage
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • 1/4 cup chopped fresh parsley
  • Vegetable oil, for frying
  • Salt, to taste
  • Marinara sauce, for dipping

Instructions

  1. In a large mixing bowl, combine the cooked Arborio rice, spicy nduja sausage, Parmesan cheese, breadcrumbs, beaten eggs, and chopped parsley. Mix well until all the ingredients are evenly distributed.

  2. Take approximately 2 tablespoons of the rice mixture and shape it into a ball. Repeat with the remaining rice mixture.

  3. Heat vegetable oil in a large pan or deep fryer. The oil should be around 350°F (175°C).

  4. Carefully drop the rice balls into the hot oil and fry them until they turn golden brown, about 3-4 minutes. Remove them from the oil and transfer them to a paper towel-lined plate to drain excess oil.

  5. Sprinkle the arancini with a pinch of salt while they’re still hot.

  6. Serve the spicy nduja arancini with marinara sauce for dipping.
