How To Make Gujarati Kadhi Recipe

Ingredients
- 1 cup yogurt
- 2 cups water
- 2 tbsp besan (gram flour)
- 1 tsp ginger paste
- 1 tsp green chili paste
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 tsp sugar
- 1 tbsp ghee (clarified butter)
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp fenugreek seeds
- 5-6 curry leaves
- 2 dried red chilies
- 1/2 tsp asafoetida
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions

In a bowl, whisk together yogurt, water, besan, ginger paste, green chili paste, turmeric powder, red chili powder, and sugar. Set aside.

Heat ghee in a pan and add mustard seeds, cumin seeds, fenugreek seeds, curry leaves, dried red chilies, and asafoetida. Let them splutter.

Pour the yogurt mixture into the pan and bring it to a boil, stirring continuously to avoid lumps.

Reduce the heat and let the kadhi simmer for 15-20 minutes, stirring occasionally.

Add salt to taste and garnish with fresh coriander leaves.

Serve hot with rice or khichdi.
