Ingredients

  • 1 lb ground turkey
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tbsp Thai red curry paste
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 8 sheets of filo pastry
  • 2 tbsp melted butter
  • Sweet chili sauce, for serving

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large skillet, heat a tablespoon of oil over medium heat. Add the onion and garlic and cook until softened.

  3. Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon.

  4. Stir in the Thai red curry paste, fish sauce, soy sauce, and lime juice. Cook for another 2-3 minutes.

  5. Remove the skillet from the heat and stir in the chopped cilantro and mint. Allow the mixture to cool slightly.

  6. Lay out one sheet of filo pastry on a clean surface and brush with melted butter. Place another sheet on top and repeat until you have 4 layers of filo.

  7. Cut the filo pastry into strips, approximately 2 inches wide. Spoon a small amount of the turkey mixture onto one end of each strip.

  8. Fold the filo over the turkey mixture, forming a triangle. Continue folding until you reach the end of the strip.

  9. Place the filo triangles on the prepared baking sheet and brush with more melted butter.

  10. Bake in the preheated oven for 12-15 minutes, or until the filo is golden brown and crispy.

  11. Serve the Thai turkey filo dippers with sweet chili sauce for dipping.
