How To Make Ricotta & Spinach Filo Bites

Ingredients
- 8 sheets of filo pastry
- 1 cup of ricotta cheese
- 1 cup of fresh spinach, chopped
- 1/4 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- Olive oil for brushing
Instructions

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, minced garlic, salt, and black pepper.

Lay one sheet of filo pastry on a clean surface and brush it lightly with olive oil. Repeat this process with two more sheets of filo pastry.

Place a spoonful of the ricotta and spinach mixture on the bottom edge of the filo pastry sheets.

Fold the bottom edge of the filo pastry over the filling, then fold in the sides, and roll it up tightly into a bite-sized parcel.

Repeat steps 3-5 with the remaining filo pastry sheets and filling until all the mixture is used.

Place the filo bites on a baking tray lined with parchment paper, brush the tops with olive oil, and bake for 15-20 minutes until golden and crispy.

Remove from the oven and let them cool slightly before serving.
