African Sweet Potato Soup Recipe

How To Make African Sweet Potato Soup

A hearty and comforting soup with sweet potato, coconut milk, and warming spices.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 can coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)

Instructions

  1. Heat the coconut oil in a large pot over medium heat.

  2. Add the onion, garlic, and ginger and cook until softened, about 5 minutes.

  3. Add in the sweet potatoes and spices, stir to coat, and cook for another 5 minutes.

  4. Pour in the vegetable broth and coconut milk, bring to a boil, then reduce the heat and simmer for 15-20 minutes or until the sweet potatoes are tender.

  5. Use an immersion blender or transfer to a blender to puree until smooth.

  6. Season with salt and pepper to taste.

  7. Serve hot with fresh cilantro (optional).
