How To Make African Sweet Potato Soup
A hearty and comforting soup with sweet potato, coconut milk, and warming spices.
Serves:
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon coconut oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 tablespoon ginger, minced
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1/4 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 can coconut milk
- Salt and pepper to taste
- Fresh cilantro, chopped (optional)
Instructions

Heat the coconut oil in a large pot over medium heat.

Add the onion, garlic, and ginger and cook until softened, about 5 minutes.

Add in the sweet potatoes and spices, stir to coat, and cook for another 5 minutes.

Pour in the vegetable broth and coconut milk, bring to a boil, then reduce the heat and simmer for 15-20 minutes or until the sweet potatoes are tender.

Use an immersion blender or transfer to a blender to puree until smooth.

Season with salt and pepper to taste.

Serve hot with fresh cilantro (optional).
