How To Make African Lentil Soup Recipe

Serves:

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp olive oil
  • 2 cups brown lentils
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, sauté onion, garlic, and ginger in olive oil until soft.

  2. Add lentils, vegetable broth, diced tomatoes, cumin, paprika, turmeric, salt, and pepper to the pot and bring to a boil.

  3. Reduce heat and let the soup simmer for 30 minutes or until lentils are tender.

  4. Add cilantro and let it cook for another 5 minutes.

  5. Serve hot.
