Ingredients

  • 1 lb. ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. paprika
  • salt and pepper to taste
  • 1 can black beans, drained
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas

Instructions

  1. In a large skillet, cook ground beef, onion, and garlic until beef is browned and cooked through.

  2. Add chili powder, cumin, paprika, salt, and pepper and stir until combined.

  3. Add black beans and cooked rice and stir until heated through.

  4. Lay out tortillas and divide beef mixture between them.

  5. Top each tortilla with shredded cheese and roll up tightly.

  6. Place burritos seam side down on a baking sheet and bake at 350°F for about 15-20 minutes or until cheese is melted and tortillas are slightly crispy.

  7. Serve hot with sour cream, guacamole, and salsa if desired.
