Ingredients

  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp unflavored gelatin
  • 1/4 cup whole milk

Instructions

  1. In a saucepan, heat heavy cream, sugar, vanilla extract, and salt over medium heat until sugar dissolves.

  2. In a small bowl, sprinkle gelatin over the milk and let sit for 5 minutes until it blooms.

  3. Add the bloomed gelatin to the warm cream mixture and stir to dissolve completely.

  4. Pour the mixture through a fine-mesh strainer into a measuring cup with a spout.

  5. Divide the mixture equally among four small cups or ramekins, cover with plastic wrap, and chill in the refrigerator for at least 4 hours or overnight.

  6. To serve, run a small knife around the edge of the cups and invert onto plates. Serve with fresh berries or fruit coulis.
