Instructions

  1. Preheat oven to 350°F. Grease a 8-inch square baking dish.

  2. In a medium bowl, combine 1 cup flour, softened butter, and 1/4 cup powdered sugar. Mix until crumbly, then press into prepared baking dish.

  3. Bake crust for 15 minutes.

  4. Meanwhile, in a separate bowl, whisk together 1 cup granulated sugar, 2 tablespoons flour, baking powder, and salt.

  5. Stir in 2 beaten eggs, lemon juice, and lemon zest.

  6. Pour mixture over crust and bake for an additional 20-25 minutes, until set.

  7. Allow to cool completely, then dust with powdered sugar and cut into squares.
