How To Make Pedro Mexican Restaurante Queso Fundido
A gooey and cheesy appetizer that will transport your taste buds to Mexico.

Ingredients
- 1 tbsp butter
- 1/2 onion, diced
- 1 jalapeno, seeded and diced
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 8 oz Mexican chorizo
- 8 oz Monterey Jack cheese, shredded
- 8 oz Queso Blanco cheese, shredded
- 1/4 cup chopped cilantro
Instructions

Preheat oven to 375°F.

In a large skillet, melt butter over medium heat.

Add diced onions, jalapeno, green bell pepper, and red bell pepper to the skillet and cook until onion is translucent, about 5 minutes.

Add Mexican chorizo to the skillet and cook until browned, breaking up any large chunks.

Remove skillet from heat and stir in shredded Monterey Jack cheese and Queso Blanco cheese until fully melted and combined.

Transfer the mixture to a baking dish and bake in the oven until bubbly and golden brown, about 10 minutes.

Sprinkle chopped cilantro over the top and serve with tortilla chips.
