Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/2 cup buttermilk
  • 1 egg, beaten
  • 2 cups sliced fresh strawberries
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 400F.

  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.

  3. Cut in butter until mixture is crumbly.

  4. Make a well in the center and add buttermilk and beaten egg, stirring just until dough forms.

  5. Turn dough out onto a floured surface and gently knead a few times.

  6. Pat dough into a 1/2 inch thick round and cut out four biscuits with a biscuit cutter.

  7. Place on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.

  8. While biscuits are baking, mix sliced strawberries with sugar in a bowl and let sit for at least 10 minutes.

  9. Whip heavy cream with powdered sugar and vanilla until soft peaks form.

  10. To assemble, split biscuits in half and top with sliced strawberries and whipped cream. Serve immediately.
