How To Make Mrs. Clinton’s Lemon Bars

Ingredients
- 1 1/2 cups of all-purpose flour
- 1/2 cup of powdered sugar
- 3/4 cup of unsalted butter, softened
- 4 eggs
- 1 1/2 cups of granulated sugar
- 1/4 cup of all-purpose flour
- 2 lemons, juiced
- Zest of 1 lemon
- Powdered sugar for dusting
Instructions

Preheat the oven to 350°F.

In a large bowl, whisk together 1 1/2 cups all-purpose flour and 1/2 cup powdered sugar.

Cut in the softened butter with a pastry cutter or fork until the mixture is crumbly.

Press the mixture into an 8×8 inch pan and bake for 20 minutes.

Meanwhile, whisk together the eggs, granulated sugar, 1/4 cup all-purpose flour, lemon juice, and lemon zest.

Pour the mixture over the hot crust and bake for an additional 20-25 minutes or until set and lightly browned.

Allow to cool completely before dusting with powdered sugar and cutting into squares.
