Ingredients

  • 1 1/2 cups of all-purpose flour
  • 1/2 cup of powdered sugar
  • 3/4 cup of unsalted butter, softened
  • 4 eggs
  • 1 1/2 cups of granulated sugar
  • 1/4 cup of all-purpose flour
  • 2 lemons, juiced
  • Zest of 1 lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F.

  2. In a large bowl, whisk together 1 1/2 cups all-purpose flour and 1/2 cup powdered sugar.

  3. Cut in the softened butter with a pastry cutter or fork until the mixture is crumbly.

  4. Press the mixture into an 8×8 inch pan and bake for 20 minutes.

  5. Meanwhile, whisk together the eggs, granulated sugar, 1/4 cup all-purpose flour, lemon juice, and lemon zest.

  6. Pour the mixture over the hot crust and bake for an additional 20-25 minutes or until set and lightly browned.

  7. Allow to cool completely before dusting with powdered sugar and cutting into squares.
