How To Make Kermit’s Jambalaya Recipe

This spicy Creole dish combines rice, sausage, chicken, shrimp, and vegetables for a flavorful Cajun experience.

Ingredients

  • 1 lb. boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 lb. andouille sausage, sliced
  • 1 lb. large shrimp, peeled and deveined
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups long grain white rice
  • 4 cups chicken broth
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tbsp. Cajun seasoning
  • 2 tbsp. olive oil

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.

  2. Add chicken and sausage, cook until browned.

  3. Add bell pepper, onion, celery, and garlic to the pot. Cook until softened, about 5 minutes.

  4. Stir in rice and cook until lightly toasted, about 5 minutes.

  5. Add diced tomatoes and chicken broth to the pot. Stir in Cajun seasoning.

  6. Bring to a boil, reduce heat to low, cover and simmer until rice is tender and liquid is absorbed, about 25 minutes.

  7. Add shrimp to the pot and cook until pink and cooked through, about 5 minutes.
