  • -1/2 head of cabbage, thinly sliced
  • 1/2 red onion, thinly sliced
  • 2 large carrots, shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a large bowl, combine the cabbage, onion, and carrots.

  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, garlic powder, salt, and pepper.

  3. Pour the dressing over the cabbage mixture. Toss until the vegetables are fully coated.

  4. Cover and refrigerate for at least 1 hour before serving.

  5. Sprinkle with chopped parsley before serving (optional).
