How To Make Furr’s Cafeteria’s Red Beans and Rice Recipe
This Cajun dish is hearty and flavorful, perfect for a comforting meal.

Ingredients
- 1 pound dried red kidney beans, soaked overnight
- 4 cups water
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 smoked ham hock
- 1 tbsp Cajun seasoning
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- Cooked white rice, for serving
- Green onions, for garnish
Instructions

Drain and rinse soaked red kidney beans.

In a large pot, add beans, water, onion, green bell pepper, and garlic. Bring to a boil.

Add smoked ham hock, Cajun seasoning, dried thyme, bay leaf, salt, and pepper.

Reduce heat to low. Cover and simmer for 2 hours, or until beans are tender.

Discard bay leaf. Remove ham hock from pot and shred the meat. Discard bones and return meat to pot.

Serve over white rice and garnish with green onions.
