  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 3 large eggs
  • 3/4 cup brown sugar
  • 3/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)
  • 1/2 cup cream cheese
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 inch baking pan.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and ginger.

  3. In another medium bowl, whisk together eggs, brown sugar, vegetable oil, and vanilla extract.

  4. Gradually add dry ingredients to egg mixture and stir until well combined.

  5. Fold in grated carrots, walnuts, and raisins.

  6. Pour batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center of the cake comes out clean.

  7. While the cake is baking, beat cream cheese and butter until light and fluffy. Gradually add in powdered sugar and vanilla extract.

  8. Let cake cool completely before spreading frosting on top. Serve and enjoy!
