Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 cups mixed greens
  • 1/2 red onion, sliced thinly
  • 1 red bell pepper, diced
  • 1/2 cup sliced almonds
  • 4 oz crumbled feta cheese

Instructions

  1. In a saucepan, add quinoa and water. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes. Fluff with a fork and set aside to cool.

  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make a dressing.

  3. In a large bowl, mix together cooled quinoa, mixed greens, red onion, red bell pepper, sliced almonds, and feta cheese.

  4. Pour dressing over the salad and toss until well combined. Serve chilled.
