A delicious and filling veggie burger, made with fresh ingredients sourced from the farmers market.

Serves:

Ingredients

  • 1 can of black beans, drained and rinsed
  • 1/2 cup of cooked quinoa
  • 1/2 cup of breadcrumbs
  • 1/4 cup of diced onion
  • 1/4 cup of diced red pepper
  • 2 cloves of garlic, minced
  • 1 tsp of cumin
  • Salt and pepper, to taste
  • 4 whole wheat buns
  • Toppings of your choice (e.g. lettuce, tomato, avocado)

Instructions

  1. Preheat the oven to 375°F.

  2. In a large mixing bowl, mash the black beans with a fork or potato masher until they form a paste-like consistency.

  3. Add in the cooked quinoa, breadcrumbs, onion, red pepper, garlic, cumin, salt, and pepper. Mix well.

  4. Divide the mixture into 4 equal portions and shape each portion into a patty.

  5. Place the patties on a baking sheet lined with parchment paper.

  6. Bake the patties for 25-30 minutes, flipping halfway through, until they are golden brown and crispy on the outside.

  7. Place each patty on a whole wheat bun and add your favorite toppings.
