Ingredients

  • 1 lb andouille sausage, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups cooked rice
  • 2 tbsp cooking oil
  • 1 tsp paprika
  • 1 tsp thyme
  • salt and pepper to taste

Instructions

  1. Heat oil in a large skillet over medium-high heat.

  2. Add sliced sausage and cook for 5 minutes, stirring occasionally.

  3. Add onions, peppers, and garlic. Cook, stirring occasionally, for 10 minutes or until vegetables are soft.

  4. Add paprika, thyme, salt, and pepper. Stir to combine.

  5. Serve over cooked rice.
