This flavorful and healthy recipe features cauliflower rice and spicy andouille sausage.

Ingredients

  • 1 lb andouille sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 head cauliflower, grated or pulsed in food processor
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add sliced andouille sausage and cook until browned.

  3. Add chopped onion and garlic and sauté until tender.

  4. Add chopped red bell pepper and cook for 2 minutes.

  5. Stir in grated or pulsed cauliflower rice, paprika, dried thyme, salt, and pepper.

  6. Cook for 10 minutes until cauliflower is tender but still slightly crisp.

  7. Taste and adjust seasoning as necessary.

  8. Serve hot.
