Ingredients

  • 1 tbsp olive oil
  • 1 lb Andouille sausage, sliced
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add Andouille sausage and cook until browned, about 5-7 minutes.
  3. Add onion, red bell pepper, and garlic, and cook until softened, about 5 minutes.
  4. Add rice to the pot and stir until coated in the vegetable mixture.
  5. Add chicken broth, paprika, and cayenne pepper. Stir to combine.
  6. Bring to a simmer, then reduce heat to low and cover pot with a tight-fitting lid.
  7. Cook for 20-25 minutes, or until rice is tender and liquid is absorbed.
  8. Season with salt and black pepper to taste.
