How To Make Eldon’s Vegetable Curry Recipe

A flavorful combination of vegetables and spices in a rich tomato sauce.

Serves:

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1 cup tomato puree
  • 4 cups mixed vegetables (carrots, potatoes, green beans, peas)
  • Salt to taste
  • 1/4 cup chopped fresh coriander

Instructions

  1. Heat oil in a pan and add onions. Saute until golden brown.

  2. Add garlic and ginger, saute for 2 minutes.

  3. Add cumin powder, coriander powder, turmeric powder, paprika and garam masala. Fry for 30 seconds.

  4. Add tomato puree and cook for 5 minutes.

  5. Add mixed vegetables and salt to taste. Cook for 20 minutes or until vegetables are tender.

  6. Garnish with fresh coriander.
