How To Make Eldon’s Shepherd’s Pie

Ingredients

  • 1 lb. ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 tsp. dried thyme
  • 1 cup beef broth
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, brown ground beef over medium-high heat. Drain excess fat.

  3. Add onion, carrots, garlic, and thyme to the skillet. Cook until vegetables are tender.

  4. Add beef broth to the skillet. Bring to a simmer and cook until liquid is reduced by half.

  5. Transfer the beef mixture to a baking dish. Spread mashed potatoes over the top.

  6. Sprinkle shredded cheese over the mashed potatoes.

  7. Bake for 25-30 minutes, or until cheese is melted and bubbly.
