Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2 medium-sized bananas)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.

  2. In a medium bowl, whisk together flour, baking soda, and salt.

  3. In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time.

  4. Mix in mashed bananas, sour cream, and vanilla extract. Gradually stir in dry ingredients until just combined.

  5. Pour batter into prepared pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool in pan for 10 minutes before removing to a wire rack to cool completely.
