Ingredients

  • 1 lb sweet Italian sausage, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes
  • Salt and pepper, to taste
  • Olive oil, as needed

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.

  2. Remove sausage from skillet and set aside. In the same skillet, add more olive oil if needed and sauté peppers, onions, and garlic until softened, about 5 minutes.

  3. Add the diced tomatoes, oregano, basil, red pepper flakes, and salt and pepper to taste. Stir to combine.

  4. Add the sausage back to the skillet and bring the mixture to a simmer. Cover and cook for 30 minutes, stirring occasionally.

  5. Serve hot with crusty bread or over pasta.
