How To Make Brock’s BBQ Cornbread Recipe

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 1 egg
  • 1/2 cup corn kernels
  • 1/4 cup diced jalapeños
  • 1/4 cup BBQ sauce

Instructions

  1. Preheat oven to 400°F.

  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together buttermilk, oil, honey, and egg.

  4. Gradually add wet ingredients to dry ingredients, stirring until just combined.

  5. Fold in corn kernels and jalapeños.

  6. Pour batter into a greased 9-inch cast-iron skillet.

  7. Drizzle BBQ sauce over the top of the batter.

  8. Bake for 25-30 minutes, or until a toothpick inserted in center comes out clean.

  9. Serve warm.
