Ingredients

  • 1 lb smoked sausage, sliced
  • 1 lb boneless chicken, diced
  • 1/2 cup flour
  • 1/2 cup vegetable oil
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes, 14 oz
  • 1 can tomato sauce, 8 oz
  • 4 cups chicken stock
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Cajun seasoning
  • 1 tbsp dried thyme
  • Salt and pepper to taste
  • Cooked rice, to serve

Instructions

  1. In a large Dutch oven, brown the sausage until crispy and remove from pan. Brown the chicken in sausage fat and remove.

  2. In the same pan, make a roux by whisking flour and oil until golden brown. Add onions, bell pepper, celery, and garlic, and cook for 5 minutes.

  3. Add sausage, chicken, tomatoes, tomato sauce, chicken stock, Worcestershire sauce, Cajun seasoning, thyme, salt, and pepper.

  4. Bring to a boil. Reduce heat and simmer for 1-2 hours until the chicken is tender and the flavors have melded together.

  5. Serve with cooked rice.
