How To Make Bourbon Street Gumbo Recipe
A zesty Cajun classic that packs a punch, with a mix of hearty veggies and smoky meat, simmered in a rich roux.

Ingredients
- 1 lb smoked sausage, sliced
- 1 lb boneless chicken, diced
- 1/2 cup flour
- 1/2 cup vegetable oil
- 1 large onion, diced
- 1 green bell pepper, diced
- 3 stalks celery, diced
- 4 cloves garlic, minced
- 1 can diced tomatoes, 14 oz
- 1 can tomato sauce, 8 oz
- 4 cups chicken stock
- 1 tbsp Worcestershire sauce
- 1 tbsp Cajun seasoning
- 1 tbsp dried thyme
- Salt and pepper to taste
- Cooked rice, to serve

In a large Dutch oven, brown the sausage until crispy and remove from pan. Brown the chicken in sausage fat and remove.

In the same pan, make a roux by whisking flour and oil until golden brown. Add onions, bell pepper, celery, and garlic, and cook for 5 minutes.

Add sausage, chicken, tomatoes, tomato sauce, chicken stock, Worcestershire sauce, Cajun seasoning, thyme, salt, and pepper.

Bring to a boil. Reduce heat and simmer for 1-2 hours until the chicken is tender and the flavors have melded together.

Serve with cooked rice.
