Ingredients

  • 1 lb chicken thighs, boneless
  • 1/2 lb andouille sausage, sliced
  • 1/2 large onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 3 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1 can diced tomatoes, drained
  • 2 tbsp creole seasoning
  • 2 bay leaves
  • 1/4 tsp cayenne pepper
  • Hot cooked rice, for serving

Instructions

  1. Heat oil in a large pot or Dutch oven over medium heat. Add chicken and sausage and cook until browned, about 3-5 minutes per side. Remove and set aside.

  2. Add onion, bell pepper, celery and garlic to the pot and cook until vegetables are tender, about 5-7 minutes.

  3. Sprinkle in flour and stir constantly until mixture is a light brown color, about 5 minutes.

  4. Slowly pour in chicken broth while stirring constantly. Add tomatoes, creole seasoning, bay leaves, and cayenne pepper. Bring to a boil.

  5. Reduce heat to low, cover and simmer for 1 hour.

  6. Return chicken and sausage to the pot and continue to simmer for an additional 30 minutes.

  7. Serve over hot cooked rice.
