How To Make Bourbon Street Chicken and Sausage Gumbo Recipe
A spicy and flavorful Cajun stew with chicken, sausage, and vegetables, served over rice.
Serves:
Ingredients
- 1 lb chicken thighs, boneless
- 1/2 lb andouille sausage, sliced
- 1/2 large onion, chopped
- 1/2 green bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 2 tbsp vegetable oil
- 3 tbsp all-purpose flour
- 4 cups chicken broth
- 1 can diced tomatoes, drained
- 2 tbsp creole seasoning
- 2 bay leaves
- 1/4 tsp cayenne pepper
- Hot cooked rice, for serving
Instructions

Heat oil in a large pot or Dutch oven over medium heat. Add chicken and sausage and cook until browned, about 3-5 minutes per side. Remove and set aside.

Add onion, bell pepper, celery and garlic to the pot and cook until vegetables are tender, about 5-7 minutes.

Sprinkle in flour and stir constantly until mixture is a light brown color, about 5 minutes.

Slowly pour in chicken broth while stirring constantly. Add tomatoes, creole seasoning, bay leaves, and cayenne pepper. Bring to a boil.

Reduce heat to low, cover and simmer for 1 hour.

Return chicken and sausage to the pot and continue to simmer for an additional 30 minutes.

Serve over hot cooked rice.
