Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup pesto sauce
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. In a large bowl, combine the shredded chicken, pesto sauce, mayonnaise, and lemon juice. Mix well until the chicken is evenly coated.

  2. Add the red onion, cherry tomatoes, black olives, and feta cheese to the bowl. Gently toss to combine all the ingredients.

  3. Season with salt and pepper to taste. Add more pesto sauce or mayonnaise if desired.

  4. Serve the chicken salad on a bed of lettuce or in a sandwich. Garnish with fresh basil leaves.
