Ingredients

  • 4 chicken breasts
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Chopped peanuts, for garnish
  • Chopped green onions, for garnish

Instructions

  1. Preheat the grill or oven to 400°F (200°C).

  2. In a bowl, mix together the peanut butter, soy sauce, honey, lime juice, garlic, ginger, red pepper flakes, salt, and pepper.

  3. Place the chicken breasts on the grill or in a baking dish.

  4. Brush the peanut butter sauce onto both sides of the chicken.

  5. Cook the chicken for about 12-15 minutes per side, or until it reaches an internal temperature of 165°F (75°C).

  6. Remove the chicken from the grill or oven and let it rest for a few minutes before serving.

  7. Garnish with chopped peanuts and green onions.
