Ingredients

  • 4 chicken breast fillets
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pitted kalamata olives
  • 2 tbsp capers
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the chicken breast fillets between two sheets of plastic wrap and flatten gently with a meat mallet or rolling pin.

  3. In a large skillet, heat olive oil over medium-high heat.

  4. Season the chicken with dried oregano, salt, and black pepper. Add the chicken to the skillet and cook for 4-5 minutes on each side until golden brown.

  5. Transfer the chicken to a baking dish and add cherry tomatoes, olives, capers, and minced garlic. Drizzle with the remaining olive oil.

  6. Bake in the preheated oven for 12-15 minutes until the chicken is cooked through and the tomatoes are slightly roasted.

  7. Sprinkle with fresh basil leaves before serving.
