How To Make Flattened Chicken with Tomatoes, Olives & Capers

Ingredients
- 4 chicken breast fillets
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/4 cup pitted kalamata olives
- 2 tbsp capers
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
Instructions

Preheat the oven to 400°F (200°C).

Place the chicken breast fillets between two sheets of plastic wrap and flatten gently with a meat mallet or rolling pin.

In a large skillet, heat olive oil over medium-high heat.

Season the chicken with dried oregano, salt, and black pepper. Add the chicken to the skillet and cook for 4-5 minutes on each side until golden brown.

Transfer the chicken to a baking dish and add cherry tomatoes, olives, capers, and minced garlic. Drizzle with the remaining olive oil.

Bake in the preheated oven for 12-15 minutes until the chicken is cooked through and the tomatoes are slightly roasted.

Sprinkle with fresh basil leaves before serving.
