Ingredients

  • 8 cups mixed greens
  • ½ cup Kalamata olives
  • ½ cup grape tomatoes, halved
  • ½ cup feta cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • 2 tbsp capers
  • 3 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • ¼ cup extra-virgin olive oil

Instructions

  1. In a large bowl, combine the mixed greens, Kalamata olives, grape tomatoes, feta cheese, red onion, and capers.

  2. In a small bowl, whisk together the red wine vinegar, Dijon mustard, garlic, salt, and pepper.

  3. Slowly whisk in the olive oil until the dressing emulsifies.

  4. Toss the salad with the dressing and serve.
