How To Make Congee with chicken

Ingredients

  • 1 cup rice
  • 4 cups chicken broth
  • 1 boneless chicken breast
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 green onions, chopped
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the chicken broth to a boil.

  2. Add the rice, chicken breast, minced garlic, and grated ginger to the pot.

  3. Reduce the heat to low and cover the pot. Let it simmer for 1.5-2 hours, stirring occasionally.

  4. Once the rice has broken down and the chicken is tender, remove the chicken breast from the pot and shred it using two forks.

  5. Return the shredded chicken back to the pot and stir in the chopped green onions and sesame oil. Cook for an additional 10 minutes.

  6. Season with salt and pepper to taste. Serve hot.
