  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chipotle powder
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Instructions

  1. Season the chicken breasts with salt, pepper, cumin, smoked paprika, and chipotle powder.

  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-8 minutes per side, or until cooked through.

  3. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add garlic and sauté for 1 minute.

  5. Stir in chicken broth, scraping the bottom of the skillet to release any browned bits.

  6. Bring to a simmer and cook for 5 minutes.

  7. Stir in heavy cream and simmer for an additional 2 minutes.

  8. Return the chicken breasts to the skillet and cook for another 2-3 minutes, or until heated through.

  9. Remove from heat and stir in chopped cilantro.

  10. Serve the creamy chipotle chicken over rice or with a side of vegetables.
