  • 4 chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a shallow dish, mix together the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.

  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5 minutes on each side, or until cooked through and browned. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Stir in the chicken broth, lemon juice, and capers. Bring to a simmer and cook for 2-3 minutes.

  4. Reduce the heat to low and whisk in the butter until melted and smooth. Return the chicken breasts to the skillet and spoon the sauce over them.

  5. Cook for an additional 2-3 minutes to heat through. Sprinkle with chopped parsley before serving.
