Juicy and flavorful roasted chicken cooked in a cast iron skillet with a herb-infused butter.

Ingredients

  • 1 whole chicken (about 4 lbs)
  • 1/2 cup unsalted butter, softened
  • 2 tbsp chopped fresh thyme
  • 2 tbsp chopped fresh rosemary
  • 2 tbsp chopped fresh sage
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper

Instructions

  1. Preheat oven to 400°F.

  2. In a bowl, combine butter, herbs, salt, and pepper. Mix well.

  3. Dry the chicken with paper towels and then rub the herb butter all over, including under the skin.

  4. Place the chicken in a large cast iron skillet (10-12 inches) and roast for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F.

  5. Let the chicken rest for 10 minutes before carving and serving.
