How To Make Chicken & Almond Pastillas

Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped almonds
  • 1/4 cup chopped fresh parsley
  • 1/4 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 package puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a bowl, combine shredded chicken, almond flour, Parmesan cheese, chopped almonds, parsley, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix well.

  3. Roll out thawed puff pastry and cut into 4 equal squares.

  4. Place a spoonful of the chicken mixture in the center of each pastry square. Fold the pastry over the filling to form a triangle and seal the edges by pressing with a fork.

  5. Place the pastillas on a baking sheet lined with parchment paper. Brush the tops with beaten egg.

  6. Bake for 20-25 minutes, or until the pastillas are golden brown and crispy.

  7. Serve hot and enjoy!
