Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup almond meal
  • 1 tbsp chopped fresh tarragon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a shallow dish, mix the almond meal, tarragon, salt, and black pepper.

  3. Rub the chicken breasts with olive oil.

  4. Dip each chicken breast into the almond mixture, coating both sides.

  5. Heat a skillet over medium heat and sear the chicken breasts for 2-3 minutes on each side, until golden brown.

  6. Transfer the chicken to a baking dish and bake in the preheated oven for 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

  7. Remove from the oven and let the chicken rest for 5 minutes before serving.
