Ingredients

  • 4 packs of instant ramen noodles
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup mushrooms, sliced
  • 2 cups baby spinach
  • 4 green onions, sliced
  • 2 boiled eggs, halved
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha (optional)

Instructions

  1. In a large pot, bring chicken broth to a boil.

  2. Add mushrooms and cook for 5 minutes.

  3. Stir in the shredded chicken, soy sauce, and sesame oil.

  4. Cook ramen noodles according to package instructions.

  5. Divide cooked noodles into 4 bowls.

  6. Ladle the chicken broth mixture over the noodles.

  7. Top with baby spinach, green onions, and boiled egg halves.

  8. Drizzle with sriracha if desired.

  9. Serve hot and enjoy!
