  • 4 parsnips, peeled and cut into sticks

  • 2 tablespoons Dijon mustard

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a small bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper.

  3. Place the parsnip sticks in a single layer on a baking sheet.

  4. Pour the honey mustard mixture over the parsnips and toss until they are well coated.

  5. Roast in the preheated oven for 25-30 minutes, or until the parsnips are golden brown and crispy.
