  • 1/4 cup diced onions
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, whisk the eggs until well beaten. Set aside.

  2. Heat the olive oil in a non-stick skillet over medium heat.

  3. Add the diced ham, bell peppers, and onions to the skillet. Sauté for 3-4 minutes until the vegetables are tender.

  4. Pour the beaten eggs into the skillet, evenly distributing the vegetables and ham.

  5. Cook the omelet for 3-4 minutes until the eggs are set around the edges.

  6. Sprinkle the shredded cheddar cheese over half of the omelet.

  7. Using a spatula, carefully fold the omelet in half to cover the cheese.

  8. Cook for another 2-3 minutes until the cheese is melted and the omelet is cooked through.

  9. Season with salt and pepper to taste.

  10. Serve hot and enjoy!
