How To Make Sharon’s Egg and Ham Scramble

Ingredients
- 8 large eggs
- 1/2 cup diced cooked ham
- 1/4 cup chopped onion
- 1/4 cup diced bell pepper
- 1/4 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tbsp olive oil
- Optional toppings: chopped fresh herbs, hot sauce
Instructions

In a large bowl, whisk the eggs until well beaten. Season with salt and pepper.

Heat the olive oil in a non-stick skillet over medium heat. Add the diced onion and bell pepper and sauté until softened, about 3 minutes.

Add the diced ham to the skillet and cook for an additional 2 minutes.

Pour the beaten eggs into the skillet with the ham and vegetables. Cook, stirring occasionally, until the eggs are scrambled and cooked to your desired level of doneness, about 5-7 minutes.
