  • 1 tbsp olive oil
  • Optional toppings: chopped fresh herbs, hot sauce

Instructions

  1. In a large bowl, whisk the eggs until well beaten. Season with salt and pepper.

  2. Heat the olive oil in a non-stick skillet over medium heat. Add the diced onion and bell pepper and sauté until softened, about 3 minutes.

  3. Add the diced ham to the skillet and cook for an additional 2 minutes.

  4. Pour the beaten eggs into the skillet with the ham and vegetables. Cook, stirring occasionally, until the eggs are scrambled and cooked to your desired level of doneness, about 5-7 minutes.

  5. Sprinkle the shredded cheddar cheese over the scrambled eggs and stir until melted and combined.

  6. Remove from heat and serve hot. Top with optional toppings if desired.
