  • 6 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled goat’s cheese
  • 1/2 cup diced chorizo sausage
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and black pepper.

  2. Heat a non-stick skillet over medium heat. Add the chorizo and cook until crispy, about 3-4 minutes. Remove from the skillet and set aside.

  3. In the same skillet, add the egg mixture. Cook for 1-2 minutes until the edges start to set.

  4. Sprinkle the goat’s cheese and cooked chorizo evenly over the omelette. Cook for another 2-3 minutes, or until the eggs are set.

  5. Using a spatula, fold the omelette in half and cook for an additional 1-2 minutes, or until the cheese is melted.

  6. Sprinkle with chopped parsley before serving.
