Instructions

  1. In a bowl, whisk the eggs until well beaten. Season with salt and pepper.

  2. Heat olive oil in a non-stick skillet over medium heat.

  3. Pour the beaten eggs into the skillet and cook for 2 minutes or until the edges start to set.

  4. Sprinkle feta cheese evenly over the eggs, followed by the chopped semi-dried tomatoes.

  5. Use a spatula to fold the omelette in half and cook for another 2-3 minutes, or until the cheese has melted and the omelette is cooked through.

  6. Remove from heat and let it rest for a minute before serving.

  7. Cut the omelette into wedges and serve hot.
