How To Make Greek Salad Omelette

Ingredients
- 8 large eggs
- 1 cup diced tomatoes
- 1 cup diced cucumber
- 1/2 cup chopped red onion
- 1/2 cup sliced Kalamata olives
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped fresh dill
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions

In a large bowl, whisk the eggs until well beaten. Season with salt and pepper.

Heat olive oil in a non-stick skillet over medium heat.

Pour the whisked eggs into the skillet and cook for 2-3 minutes until the edges start to set.

Sprinkle the tomatoes, cucumber, red onion, Kalamata olives, and feta cheese evenly over the eggs.

Cook for another 2-3 minutes until the omelette is fully set and the cheese is slightly melted.

Sprinkle with chopped fresh dill.

Slide the omelette onto a serving plate, dividing it into 4 portions.
