Ingredients

  • 8 large eggs
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1/2 cup chopped red onion
  • 1/2 cup sliced Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk the eggs until well beaten. Season with salt and pepper.

  2. Heat olive oil in a non-stick skillet over medium heat.

  3. Pour the whisked eggs into the skillet and cook for 2-3 minutes until the edges start to set.

  4. Sprinkle the tomatoes, cucumber, red onion, Kalamata olives, and feta cheese evenly over the eggs.

  5. Cook for another 2-3 minutes until the omelette is fully set and the cheese is slightly melted.

  6. Sprinkle with chopped fresh dill.

  7. Slide the omelette onto a serving plate, dividing it into 4 portions.

  8. Serve hot and enjoy!
