How To Make Ginger Chicken & Peach Salad

Ingredients
- 2 chicken breasts, boneless and skinless
- 1 inch ginger, grated
- 2 cloves of garlic, minced
- 2 peaches, sliced
- 4 cups mixed greens
- 1/4 cup sliced almonds
- 1/4 cup chopped cilantro
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp honey
- Salt and pepper to taste
Instructions

In a bowl, combine grated ginger, minced garlic, olive oil, soy sauce, honey, salt, and pepper. Mix well.

Marinate the chicken breasts in the ginger mixture for at least 10 minutes.

Heat a grill or grill pan over medium heat. Cook the chicken for about 6-8 minutes on each side, or until cooked through. Let it rest for 5 minutes, then slice into thin strips.

In a large bowl, toss the mixed greens, sliced peaches, sliced almonds, and chopped cilantro.

Add the sliced ginger chicken to the salad and drizzle with any remaining marinade.
