Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 inch ginger, grated
  • 2 cloves of garlic, minced
  • 2 peaches, sliced
  • 4 cups mixed greens
  • 1/4 cup sliced almonds
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine grated ginger, minced garlic, olive oil, soy sauce, honey, salt, and pepper. Mix well.

  2. Marinate the chicken breasts in the ginger mixture for at least 10 minutes.

  3. Heat a grill or grill pan over medium heat. Cook the chicken for about 6-8 minutes on each side, or until cooked through. Let it rest for 5 minutes, then slice into thin strips.

  4. In a large bowl, toss the mixed greens, sliced peaches, sliced almonds, and chopped cilantro.

  5. Add the sliced ginger chicken to the salad and drizzle with any remaining marinade.

  6. Serve immediately and enjoy!
