  • 8 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 1 cup diced potatoes
  • 1/2 cup diced onions
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, whisk together eggs, milk, salt, and black pepper.

  3. In a large skillet over medium heat, melt butter. Add potatoes and cook for 5 minutes, stirring frequently.

  4. Add onions, green bell peppers, and red bell peppers. Cook for an additional 5 minutes until vegetables soften.

  5. Pour the egg mixture over the vegetables. Sprinkle with shredded cheddar cheese.

  6. Transfer the skillet to the oven and bake for 15 minutes until the eggs are set and the cheese is melted.

  7. Garnish with chopped fresh parsley and serve.
